The jars are easy Zo open  but may present a health hazard. Some people open jars of baby food in the store, perhaps taste them, and return them to the shelves. The contaminated jars then present a health haz- ard. Many baby foods arc vacuum scaled. Two types of caps are commonly used to indichte whcther the jar has been opened. One has a "but- ton" in' the center of the cap Which is held in a depressed position by the vacuum. If the vacuum is lost, the "button" humps up. Another safety cap is in two sections with contin- uous parallel lines running across the top. Once thc jar is opencd the lines no longer match. On opening a jar with vacuum closure, listen for the characteristic sound, and avoid use of the food if the sound is not heard. Once opened, baby foods should be covered and kept in the refrigerator.
